systemd 245 doesn't auto-append the '.conf' extension when matching the default boot entry, thus making the alphabetically last one (uefi-shell-v2-x86_64.conf) into the default. Restore "Arch Linux archiso x86_64 {CD,USB}" as the default boot entry.
