I tried mlabel. It's apparently part of the mtools package--which is
an additional package--whereas I already had dosfslabel on my system.
But worse, mlabel apparently failed silently, where dosfslabel griped
that "There are differences between boot sector and its backup," but
this was apparently unimportant, at least for my purposes.
