If you really want to have the latest supertuxkart... why not create a seperate package for 0.7.3 in the aur? irrlicht-svn already exists at http://aur.archlinux.org/packages.php?ID=50818 so I don't know what the problem is.
supertuxkart-svn exists: https://aur.archlinux.org/packages.php?ID=37048 and depends on the aforementioned irrlicht-svn p.s. If you really want to be bleeding edge, you might be able to update the supertuxkart-svn PKGBUILD, as a newer revision is available.
