Since I'm more or less the current elasticsearch maintainer: As I've written in a past mail [0] I
would hold the ELK stack <7.11.0 until we have opensearch in the repos. I wouldn't drop
elasticsearch entirely though.
The mentioned issues seem to have been resolved, I should take another look at this.
